I am not sure how many people would dig this but it is a true study in what the Simcoe hop can be. This is one that just makes me keep going for a second sip. The oats help keep it really soft and pillowy. Midnight black with a thin off white head, I would grade it higher if there was more head. At the time of writing this, the beer has been in the keg for almost four months and it is holding up very well. I love this beer and will likely brew it again but this is a beer for me and likely not a crowd pleaser. This beer is bursting with Simcoe flavor, perhaps single overmuch. I really like the grain bill on this, it is super smooth and dark without being too “roasty.” Shortly before brewing this Dominick brought a Simcoe from Hill Farmstead for us to try and I thought it was just fantastic. My intention for this beer was to be super dark and extremely piney. ![]() I was thinking of the idea of a super dark pine Forrest for this beer. I am not sure where this beer came from but I am glad it is here! I am not fluent in Latin but my understanding is “De Tenebris, Tenebrae” could be roughly translated as Darkness Begats Darkness.
